Layered Buffalo Chicken Dip

It’s true that for the last several years of marriage, our super bowl celebration has been somewhat simple and cheap. We love simple and cheap! We always have so much food left over, but this year we decided on just a simple dip. While search what to make, we found a random food video, tweaked it a little, and made it our own. It just became a simple layered buffalo chicken dip.

Ingredients

  • 1 8 oz. can of black beans or refried beans
  • 2 large chicken breasts (shredded) or 2 cups shredded rotisserie.
  • 1 cup hot sauce
  • 1 packet dry ranch
  • 8 oz. cream cheese
  • 1 cup Guacamole.
  • 1 cup Sour Cream.
  • 5 oz. Blue Cheese crumbles (or enough to cover the top)
  • Diced Clery – optional.

Instructions

  • We used rotisserie chicken to make the process easier, or you can cook 2 chicken breasts and set aside.
  • Spread the black beans or refried beans on the bottom of a 9×13 (we used an 8×8).
  • In a large bowl mix the shredded chicken cream cheese, hot sauce and ranch mix together. We used an electric mixer for convivence.
  • Spread the cream cheese mixture over the top of the black beans.
  • Place into a 425-degree oven for about 10 minutes or until bubbly.
  • Remove, and let cool for about 10 minutes. Then layer the of salsa, guacamole, and sour cream. Here you can add a layer of shredded cheese if you wish.
  • Lastly, sprinkle with blue cheese crumbles and diced celery.

  • 1 cup Thick and Chinky Salsa
  • 1 cup Sour Cream
  • 1 cup Guacamole
  • 2 cups Blue Cheese Crumbles
  • Diced Celery optional
  • 1 cup Shredded Cheese of your choice optional

  • Cook and shred the chicken breasts. We used 2 cups shredded rotisserie chicken for the convivence. Then you have extra to use for something else.
  • Wash the black beans or refried beans and spread the on the bottom of a greased baking dish. For this we used an 8×8 dish. Really any size baking dish will work.
  • In a small bowl mix the shredded chicken, hot sauce, ranch mix, cream cheese. We used an electric mix for convivence. Set aside once mixed through.
  • Spread the cream cheese, chicken and hot sauce mixture over the top of the black beans. Sprinkle your choice of shredded cheese over the top
  • Place into a 400 °Foven for about 10 minutes until nice and bubbly.
  • Next layer the top with salsa, guacamole, and sour cream. Sprinkle with blue cheese crumbles, and diced celery.

Leftover Alert!

Part of our weekly grocery routine is picking up a couple of rotisserie chickens each week. We bring them home shred them and debone them and put them in an airtight container that we use throughout the week. When we make this particular dip and we have an abundance of leftovers, we make two more dinners for the week.

One night we spread the dip on a small tortilla, roll them up, spray with a little olive oil, and put them in the air fryer at 370 for a few minutes on each side. They come out nice and crispy almost like a taquito. You can dip them in salsa or sour cream for an easy dinner.

The second night we take the last of the dip and serve a little scoop over a bed of rice. Heat as needed. This layered buffalo chicken dip can really stretch through the week if you want it to. If your family is dip hungry, then you can also just serve it as a dip for a game day or any family night. Or if you are just needing other dip ideas you can try Hot Pizza Dip, Spinach Queso, or Nolan’s Bean Dip.
