Cool off with these frozen strawberry bars – a creamy treat that’s perfect for hot summer days. Made with frozen strawberries, bananas, crunchy pecans, and fluffy Cool Whip, each bite is a nice burst of fruity cool, cold goodness. Easy to make and even easier to enjoy, these bars are the chill dessert your summer needs. And they are kid-friendly too!

Ingredients
8 oz. Crem Cheese
3/4 cup sugar
1 large can crushed pineapple, or tidbits. About 20 oz.
About 10 oz. sliced frozen or fresh strawberries.
1/2 Cup Chopped nuts. Pecans, walnuts, cashews, will all work.
Juice of 1 lime, and the zest.
2 bananas (sliced)
1 large Tub Cool Whip, or 2 8 oz. tubs.
3 tbsp. Vanilla

Instructions
- Beat the cream cheese, and the sugar until well mixed. We have a stand mixer, so that is what we used, but I think a hand mixer would work well too. A stand mixer is a great investment, if you don’t have one. We’ve had ours over 10 years and still runs like a champ. Thery are a little pricy, but well worth the investment.
- In another large bowl combine the drained pineapple, frozen strawberries, chopped nuts, bananas, Cool Whip, lime juice and zest, and vanilla. Mix thoroughly, but gently. If you are using a stand mixer use a lower speed. Too fast will puree your strawberries, and we cannot have that!
- Next combine both mixtures together and gently fold together.
- Then pour the mixture into a freezable Pyrex, or 9×13 baking dish. You can use the aluminum trays if you want. Just use something that is freezer safe.
- Place in the freezer overnight and remove 10 minutes before serving. Cut into squares and serve. Add extra whipped cream, and diced strawberries if you wish.
