Strawberry Bars

  • 1 9x13 Baking dish
  • 1 Stand Mixer optional
  • 1 Hand Mixer

Ingredients

  • 8 oz. Cream Cheese
  • 3/4 Cup Sugar
  • 1 20 oz. Can Crushed Pineapple or tidbits
  • 10 oz. Fresh or frozen strawberries
  • 1/2 Cup Chopped nuts Pecans, walnuts, cashews will work.
  • 1 Lime Juice and zest.
  • 2 Bananas Sliced
  • 2 8 oz. Tub Cool Whip Or one large tub.
  • 3 tbsp Vanilla

Instructions

  • Beat the cream cheese, and the sugar until well mixed. We have a stand mixer, so that is what we used, but I think a hand mixer would work well too. A stand mixer is a great investment, if you don’t have one. We’ve had ours over 10 years and still runs like a champ. They are a little pricy, but well worth the investment.
  • In another large bowl combine the drained pineapple, frozen strawberries, chopped nuts, bananas, Cool Whip, lime juice and zest, and vanilla. Mix thoroughly, but gently. If you are using a stand mixer, use a lower speed. Too fast will puree your strawberries, and we cannot have that!
  • Next combine both mixtures together and gently fold together.
  • Then pour the mixture into a freezable Pyrex, or 9×13 baking dish. You can use the aluminum trays if you want. Just use something that is freezer safe.
  • Place in the freezer overnight and remove 10 minutes before serving. Cut into squares and serve. Add extra whipped cream, and diced strawberries if you wish.

Notes

For this recipe we used a stand mixer, but a hand mixer would work just as well. You could replace the strawberries with any other fruit that you enjoy!
You can freeze for 8-12 hours until solid, but it's best to freeze overnight. 
Ex. If you made it Friday after work, it would best by Saturday afternoon.
