Beat the cream cheese, and the sugar until well mixed. We have a stand mixer, so that is what we used, but I think a hand mixer would work well too. A stand mixer is a great investment, if you don’t have one. We’ve had ours over 10 years and still runs like a champ. They are a little pricy, but well worth the investment.
In another large bowl combine the drained pineapple, frozen strawberries, chopped nuts, bananas, Cool Whip, lime juice and zest, and vanilla. Mix thoroughly, but gently. If you are using a stand mixer, use a lower speed. Too fast will puree your strawberries, and we cannot have that!
Next combine both mixtures together and gently fold together.
Then pour the mixture into a freezable Pyrex, or 9×13 baking dish. You can use the aluminum trays if you want. Just use something that is freezer safe.
Place in the freezer overnight and remove 10 minutes before serving. Cut into squares and serve. Add extra whipped cream, and diced strawberries if you wish.
