Fall Fork Cookies

I like Fall. I like pumpkin. Everything does not need to be pumpkin this time of year, so we enjoy these instead. This recipe for fall fork cookies is just as easy to make, then it would be to try and make something else pumpkin flavored. Kidding! Enjoy your pumpkin, but these are another great option for anyone that wants the flavors of fall and the ease of a quick cookie. Ok, Ok, it has a smidgen of pumpkin pie spice.

Fall Fork Cookies

Equipment

  • 1 Stand Mixer

Ingredients
  

  • 1 Cup Sugar
  • 1 Cup Brown Sugar
  • 2 tsp Baking Soda
  • ½ tsp Cinnamon
  • 2 Cups Flour
  • 1 Cup Shortening
  • 3 Eggs
  • 1 tbsp Vanilla
  • 1 pinch Salt
  • 1 tsp Pumpkim Pie Spice
  • 1 tbsp Ground Ginger
  • 1 tbsp Ground Cloves
  • 1 tbsp Ground Nutmeg

Instructions
 

  • Mix in all the ingredients straight down the list while the mixer is running.
    (This is easier way that we find to do this, so they don't end up being over mixed)
    If you don't have a stand mixer, mix in 3 of the ingredients, and them mix together, and so on until all of the ingredients have been folder together. Also be sure you are using a good sturdy spoon. You could also use a hand mixer as well following the same steps.
  • Drop teaspoon sized scoops on a greased cookies sheet and bake at 425 degrees for about 10 minutes. A good cookie scoop works well for this.
  • If you want to get really fancy you can fork smash the tops, but we never usually make it that far.

These are simple enough to make that even the kids help us. These are great for a church dessert, school party, or even just to keep at home. More importantly you can even fancy them up and give them out as gifts. It doesn’t say anywhere that you can’t add a little cream cheese, or buttercream frosting. Which would make them even more amazing. However, you can also try Bluebird Cookies, Easy Cherry Cream Cheese Brownies, or Chocolate Chip Dump Bars that are all still so good.
