Raspberry Delight

A really cold and cool dessert for a hot day. This is not the healthiest, so we make it sparingly, but it always hits the spot. We can always use it to get rid of all of our summer berries stored up in the freezer.

Ingredients
  

  • 1 box Vanilla Wafers
  • cups Powdered sugar
  • 8 oz Butter or 2 sticks
  • 3 Eggs optional
  • 2 8 oz. tubs Cool Whip
  • 1 can Crushed Pineapple drained
  • 12 oz Frozen Raspberries slightly crushed
  • 2 tsp Vanilla

Instructions
 

  • Butter or grease a 9×13 pan, then crumble or crush vanilla wafers (1 box) and line the pan with them.

  • Beat together powdered sugar, butter, and eggs, until creamy.
  • Then pour the mixture over the vanilla wafers.
  • Next, mix together 2 tubs cool whip, drained pineapple, raspberries, and vanilla.
  • Then spread over previous mixture.
  • Then top with crumbled vanilla wafers.
  • Chill for 2-4 hours before serving. 

Notes

**If the eggs are a concern, you can omit them from the second layer and use 1 block cream cheese instead.  We’ve used both but like the eggs better.  Do what works best for you.

Raspberry Delight is really something that is really simple to make, can feed a crowd, or satisfy your sweet tooth. It’s something that you can easily make with kids, and is super simple for any potluck, BBQ, or any crowded function. It’s perfect for, your weekday dessert, or a last-minute side dish.

12 oz Frozen Raspberries slightly crushed

Instructions

Beat together powdered sugar, butter, and eggs, until creamy. (Or substituted cream cheese)

Then pour the mixture over the vanilla wafers.

Next, mix together 2 tubs cool whip, drained pineapple, raspberries, and vanilla.

Then spread over previous mixture.

Then top with crumbled vanilla wafers.

Chill for 2-4 hours before serving. 

Other options that can be used in place of the raspberries:

Strawberries, Blueberries, Blackberries, Peaches, Mixed Berries.
