This Potato Casserole recipe really isn’t your traditional funeral potatoes, even though it might seem like it. This is just a really simple main dish casserole that you really don’t have to eat for breakfast. In fact, this is best served as a main dish with a simple side of veggies, salad, or bread.

  • 1 9×13 Pan
  • 1 Large Mixing Bowl

Ingredients
  

  • 1 32 oz. Hash Brown Potatoes Thawed
  • 1 Can Cream of Chicken
  • ½ Cup Chopped Onions
  • ½ Cup Chopped Celery
  • Cup Pimento or about 4oz jar. or red bell pepper
  • Cup Chopped Green Peppers
  • 8 oz. Sour Cream
  • ½ stick Melted Butter
  • 3 Cups Shredded Cheese 2 cups for the mixture, and another cup for the topping.

Instructions
 

  • Mixed all ingredients into a large mixing bowl except the butter and 1 cup of the shredded cheese.
  • Place mixture into a greased 9×13 baking dish.
  • Pour the melted butter over the mixture.
  • Top with the remaining cup of shredded cheese.
  • Bake at 350 °F for about 45 minutes.

½ Cup Chopped Celery

⅓ Cup diced Pimento (about 4oz jar) or 1 red bell pepper

⅓ Cup Chopped Green Peppers

8 oz. Sour Cream

½ stick Melted Butter

3 Cups Shredded Cheese (2 cups for the mixture, and another cup for the topping).

Instructions

Mixed all ingredients into a large mixing bowl except the butter and 1 cup of the shredded cheese.

Place mixture into a greased 9×13 baking dish.

Pour the melted butter over the mixture.

Top with the remaining cup of shredded cheese.

Bake at 350 °F for about 45 minutes.

This is something that might appear as a breakfast casserole, but we can assure you that it is anything but that. It contains just a simple cheesy, potato crispy, wholesome casserole. This is best served with a side of crusty bread or some steamed veggies. The best part about it is that there are plenty of leftovers.
