Pineapple Cake
One of our youngest helped make this pineapple cake, and it was incredibly simple. I would have never thought that making such a simple cake would be so easy, and it came together with just a few ingredients. If pineapple isn’t your thing this Cherry Lemon Crazy Cake is super easy too. Something that is really important in our family is teaching both our kids how to find their way around the kitchen. We take every opportunity that we can to get them in there and help us in any way they can. This is how they understand how cooking from home works, and how they can carry those tools out into the world.
Pineapple Cake
Equipment
- 1 Sifter
Ingredients
- 2 Cups Flour
- 2 Cups Sugar
- 2 tbsp. Baking Soda
- 1 Can Crushed Pineapple drained.
- 1 tbsp. Vanilla
- 2 Eggs.
Icing
- 1½ Cup Sugar
- 1 Cup Milk
- ¾ Stick Butter
- 1 Cup Chopped nuts of your choice. we used Pecans.
- 1 Cup Coconut
Instructions
- Sift together the flour, sugar, and the baking soda.
- In a medium bowl add the crushed pineapple, eggs, and vanilla.
- Add the dry sifted ingredients all together with the wet ingredients and mix well.
- All the mixture to a 9×13 greased/floured pan.
- Bake at 350 degrees for about 30-40 minutes.
- Once the cake is done remove from the oven and begin the icing. Or if you would rather, you can begin the icing process about 5 minutes before the cake is complete.
Icing
- In a small saucepan bring the sugar, milk, butter to boiling.
- Add the nuts, coconut, and boil 2 additional minutes. – stirring consistently.
- Pour the hot icing over the hot cake and let stand for about 15 minutes.
This cake was so simple, and so easy to make. It came together in just under an hour, and even the kids loved it. It tasted great right out of the oven and was even better after being in the refrigerator for several days after. I will say the best way to enjoy it is right out of the oven with a great big scoop of vanilla ice-cream on top.
Ingredients:
2 Cups flour

And about 2 Tablespoons Baking Soda
- (Top 3 ingredients sifted together)
1 Can Crushed pineapple.
2 Eggs
1 tablespoon Vanilla.
Icing:
1 1/2 Cups Sugar
1 Cup Milk
3/4 Stick of butter
- In a small saucepan bring the sugar, milk, butter to boiling.
- Add the dry sifted ingredients together with the wet ingredients and mix well.
- Lastly, pour the hot icing over the hot cake, so it can fill the open cracks and run down the sides of the cake.
- You can serve immediately or let cool for about 15 minutes.
