Pineapple Cake
This cake was so simple, and so easy to make. It came together in just under an hour, and even the kids loved it.
- 2 Cups Flour
- 2 Cups Sugar
- 2 tbsp. Baking Soda
- 1 Can Crushed Pineapple drained.
- 1 tbsp. Vanilla
- 2 Eggs.
Icing
- 1½ Cup Sugar
- 1 Cup Milk
- ¾ Stick Butter
- 1 Cup Chopped nuts of your choice. we used Pecans.
- 1 Cup Coconut
Sift together the flour, sugar, and the baking soda.
In a medium bowl add the crushed pineapple, eggs, and vanilla.
Add the dry sifted ingredients all together with the wet ingredients and mix well.
All the mixture to a 9x13 greased/floured pan.
Bake at 350 degrees for about 30-40 minutes.
Once the cake is done remove from the oven and begin the icing. Or if you would rather, you can begin the icing process about 5 minutes before the cake is complete.
Icing
In a small saucepan bring the sugar, milk, butter to boiling.
Add the nuts, coconut, and boil 2 additional minutes. - stirring consistently.
Pour the hot icing over the hot cake and let stand for about 15 minutes.
