Lemon Pork Chops

This is a great little recipe for Lemon Pork Chops that I pulled from and old school cookbook from the early 1980’s. When I was kid in first grade everyone chipped in their own favorite recipes, and then it was bound in a cookbook. It was from Roosevelt Elementary in Rosevelt, Utah, but it still has some banger recipes. I just came across it a few months ago, so we have proceeded to make several recipes out of it, and we really haven’t been disappointed. I realize that this recipe may already exist, but it’s from Eddie Bullock, and it’s amazing! Thanks, Eddie, for the chop recipe, wherever you might be!

Lemon Pork Chops

Lemon Pork Chops

Ingredients
  

  • 4-6 Pork Chops Thickness will depend on cooking time.
  • 1 Medium Onion Sliced
  • 1-2 Lemons

Mixture

  • ½ Cup Brown Sugar
  • ½ Cup Ketchup
  • ½ Cup Vinegar

Instructions
 

  • Place the pork chops into a 9×13 baking dish or a cast iron skillet. We make 4 at a time, so we used cast iron.
  • Slice the onion and the lemon about ½ inch thick, and place one of each on top of the pork chops.
  • In a medium bowl mix together the brown sugar, ketchup, and vinegar.
  • Pour some of the mixture over each of the chops, and place into a 350 °Fven.
