Green Chili Rice

This green chili rice recipe is easy to make on a budget and is a great side for any meat. We’ve served it with pork chops, steak, and chicken enchiladas. Plus, it is also a different way to change our basic rice.

Ingredients for Green Chili Rice

  • 2 Cups White Rice
  • 2 4 oz. cans Dice green chilies
  • 4-5 Cups Shredded Pepper Jack cheese or cheese of your choice. (We enjoy it just a little spicy)
  • 8 oz. Sour cream (you can add more if you wish)
  • 1 jalapeno diced, or seeds removed for less spice. Your choice.
  • 2-3 tbsp butter
  • 1 tbsp Chili powder

Green Chili Rice

We sometimes get tired of basic rice, so we add a few more ingredients, and it makes it so much better. Plus, it's a rather inexpensive side that goes with many other main dishes.

  • 1 2 qt. baking dish
  • 1 Large Mixing Bowl

Ingredients
  

  • 2 Cups White Rice
  • 2 4 oz. cans Dice green chilies
  • 4-5 Cups Shredded Pepper Jack cheese or cheese of your choice.
  • 8 oz. Sour cream you can add more,
  • 1 jalapeno diced, or seeds removed for less spice. Your choice.
  • 2-3 tbsp butter
  • 1 tbsp Chili powder

Instructions
 

  • Cook rice according to package instructions. We prefer white rice, or jasmine rice, but you can choose other options.
  • Once the rice is cooked place into a large mixing bowl. Next stir in the sour cream, green chilies, most all the cheese saving a little for the top, jalapeno, chili powder.
  • Gently mix together. Be careful not to over mix or mash the rice. Otherwise, it may turn out mushy.
  • Place mixture into a greased 2-quart baking dish. Sprinkle with remixing cheese, and dot with the butter.
  • Bake at 350 degrees for about 30 minutes.

Notes

  • You can definitely add more cheese or more sour cream to make the dish even creamier.  You can also double the recipe for larger portions.

We usually serve this as side with some sort of meat. It goes great with simple grilled pork chops or even steak. It also pairs well with chicken enchiladas, and you also top with a little chopped cilantro, if you don’t think it taste like soap. 🤣
