Green Chili Rice
We sometimes get tired of basic rice, so we add a few more ingredients, and it makes it so much better. Plus, it's a rather inexpensive side that goes with many other main dishes.

1 2 qt. baking dish
1 Large Mixing Bowl
- 2 Cups White Rice
- 2 4 oz. cans Dice green chilies
- 4-5 Cups Shredded Pepper Jack cheese or cheese of your choice.
- 8 oz. Sour cream you can add more,
- 1 jalapeno diced, or seeds removed for less spice. Your choice.
- 2-3 tbsp butter
- 1 tbsp Chili powder
Cook rice according to package instructions. We prefer white rice, or jasmine rice, but you can choose other options.
Once the rice is cooked place into a large mixing bowl. Next stir in the sour cream, green chilies, most all the cheese saving a little for the top, jalapeno, chili powder.
Gently mix together. Be careful not to over mix or mash the rice. Otherwise, it may turn out mushy.
Place mixture into a greased 2-quart baking dish. Sprinkle with remixing cheese, and dot with the butter.
Bake at 350 degrees for about 30 minutes.
- You can definitely add more cheese or more sour cream to make the dish even creamier. You can also double the recipe for larger portions.
