Green Chili Rice

We sometimes get tired of basic rice, so we add a few more ingredients, and it makes it so much better. Plus, it's a rather inexpensive side that goes with many other main dishes.

Ingredients
  

  • 2 Cups White Rice
  • 2 4 oz. cans Dice green chilies
  • 4-5 Cups Shredded Pepper Jack cheese or cheese of your choice.
  • 8 oz. Sour cream you can add more,
  • 1 jalapeno diced, or seeds removed for less spice. Your choice.
  • 2-3 tbsp butter
  • 1 tbsp Chili powder

Equipment

  • 1 2 qt. baking dish
  • 1 Large Mixing Bowl

Method
 

  1. Cook rice according to package instructions. We prefer white rice, or jasmine rice, but you can choose other options.
  2. Once the rice is cooked place into a large mixing bowl. Next stir in the sour cream, green chilies, most all the cheese saving a little for the top, jalapeno, chili powder.
  3. Gently mix together. Be careful not to over mix or mash the rice. Otherwise, it may turn out mushy.
  4. Place mixture into a greased 2-quart baking dish. Sprinkle with remixing cheese, and dot with the butter.
  5. Bake at 350 degrees for about 30 minutes.

Notes

  • You can definitely add more cheese or more sour cream to make the dish even creamier.  You can also double the recipe for larger portions.
