Creamy Chicken Soup

This creamy chicken soup recipe is a filling and hearty soup that can be made easily in the crockpot. For us, we’re always looking for something easy when it’s cold outside, and this really does hit the spot. It even more convenient that it can cook throughout the day and has easy and minimal clean up. If there happens to be any leftovers that can easily be put in the freezer for another easy night meal.

Ingredients

1 Whole rotisserie chicken, or 2-3 cups cooked and shredded chicken breasts.

3 Cups Chicken Broth

1 Cup Water

2 cans cream of chicken soup.

1 8 oz. blocks of cream cheese.

1 Medium diced onion.

5 cloves diced garlic.

1 Cans Navy Beans

1 Cans Cannellini Beans

8 oz. Heavy Whipping Cream

1 cup diced carrots.

1 cup diced celery.

Instructions

Shred the rotisserie chicken or cooked chicken breast and set aside.

Next, drain and rinse the navy beans and cannellini beans.

Add all other ingredients and stir together until well combined.

Add the chicken and mix everything together until well combined.

Cook on low for 4-6 hours or high for a few hours, or until everything in warmed through.

*If you find that your soup is to thick add more water or chicken broth to the mixture. We like a heartier soup, so we kept our thicker.

This is super yummy and another quick option if you are looking for something other than chili. It's thick and creamy, and really hits the spot on a cold day. Finish with a little shredded pepperjack cheese and some dry basil. Everything can be done in the crockpot, so you have minimal cleanup. It can also be adjusted for smaller or larger amounts of people. Soup is very versatile and can easily be adjusted to add more ingredients or flavor.

  • 1 Crock Pot

Ingredients
  

  • 2 cups Shredded chicken breast or shredded rotisserie chicken.
  • 3 cups Chicken Broth
  • 2 cans Cream of Chicken Soup
  • 1 block Cream Cheese
  • 2 tbsp Minced Garlic
  • 1 Can Navy Beans drained.
  • 1 Can Cannellini Beans drained.
  • 8 oz Heavy Whipping Cream
  • 1 medium Onion diced.
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Water can add more of less depending on how thick you like your soup.
  • Salt and Pepper to taste.

Instructions
 

  • Shred the rotisserie chicken or cook the chicken breasts, shred and set aside.
  • Next, drain and rinse the navy beans and cannellini beans. 
  • Add all ingredients into the crockpot and stir together until well combined.
  • Add the shredded chicken and the beans and continue to stir until everything is weel combined.
  • Cook on low for 6-8 hours.

I’m pretty convinced that most anything that is made in the crockpot can be easily made with minimal clean-up.
