Banana Pudding Bundt Cake
This banana pudding bundt cake recipe is pretty amazing and is ready with just a few ingredients in about 45 minutes. It’s a great way to get rid of bananas if you are worn out from banana bread. It works great for a crowd for any summer BBQ, or anything you need in just a short time. If you’re not familiar with a bundt cake pan, then no worries, you can use a 9×13 baking dish as well.
Ingredients
2 Ripe Bananas
1 Yellow Cake Mix
4 Eggs
1 pkg Banana Cream or Vanilla pudding mix
1 cup Water
¼ cup Oil
½ cup Chopped Nuts (Pecans or Walnuts)
1 tbsp Vanilla
2 tbsp milk for the glaze
Powdered sugar for the glaze
For all things baking and bundt cakes, I always use Baker’s Joy. It comes out clean, every time. Non-stick, no mess, and my bunt cakes come out completely intact.
Directions
Peel the bananas and use a fork to mash them down to a soup-like consistency. This is a great time to use those frozen bananas that you were saving to make banana bread that you knew you would never use.
Add all four eggs, and all other ingredients, except the nuts. You can add the chopped pecans/walnuts into the batter or save them to sprinkle on top. We did both.
Spray the bundt pan or baking dish with the Baker’s Joy, and then tap and shake evenly to level out the batter.
Glaze
The glaze is just a simple milk and powdered sugar recipe. Start with a few tablespoons of milk and add powdered sugar until it reached the consistency that you ware wanting. The thicker the glaze is, the more likely it will adhere to the cake. A thicker glaze will also hold the pecans/walnuts, should you put them on top of the cake.
