Banana Parfait
If you’re searching for a simpler, and a semi-healthy treat for your kids, then this banana parfait is it! It doesn’t even have to be for the kids, because I ate an entire serving as well. Also, if you tired of banana bread it another great option to get rid of older bananas. You can dress it up any way you wish or make it as fancy as you want. One of our kids was rather tickled that we put it in a fancy parfait dish, but it tastes just the same from a bowl, or a small mason jar.
Banana Parfait
Ingredients
- 4-5 Ripe Bananas
- 1 Tbsp. Lemon Juice
- 1-2 Tbsp. Honey
- 2 Cups Fresh Berries
- 1/2 Cup Granola or nut of your choice
- 1-2 Tbsp. Chia Seeds
- Whip Cream or Low-Fat Greek yoghurt. Optional
Instructions
- In a small bowl mash, the bananas together until you have your desired consistency. You can use a blender if you wish, we just prefer it a little chunkier.
- Next fold in the lemon juice, honey, chia seeds, and some of the berries. You can save a few berries back for the top.
- Place the banana mixture in the bottom of the parfait glass, then add whipped topping if you wish, and top with a few berries, and your choice of nuts.
- We prefer to let it chill in the fridge for about 10-15 minutes. It's better if it's a little chilled.

This is another way for us to put something together in a small amount of time, that the kids will eat. We always seem to be trying to get rid of leftover of bananas, and we never use them when we put them in the freezer. For this recipe you can also substitute the cool whip for a Greek yogurt.
