Cowboy Spread
This cowboy spread recipe is very similar to what you might have seen as Cattleman’s Spread. However, because we are not huge fans of hot dips, other than Bean and Bacon Queso or queso in general this is the one we make in our home. It’s a simple semi- crunchy dip that works great with a basic cracker or a Crostini Bread for Dipping. And it has some heat.
Ingredients:
1 Cup chopped Pecans.
2 Tbsp. Butter
16 oz. softened Cream Cheese
2 Tbsp. Red Pepper Flakes (or more depending on your level of heat)
1 Tbsp. Honey
1/2 Tsp. Garlic Powder
1 Cup Sour Cream
4 Tsp. Sliced Green Onion.
5-6 oz. Dried Beef.
Carl Budding Dried Beef is also a good option if you cannot find the dried beef.
Instructions:
In a small skillet sauté the pecans and the butter and set aside.
In a large bowl, or you can use a stand mixer, combine remaining ingredients and mix well. Make sure not to over mix.
You can add the sliced green onion into the mixture, or you can use it to just sprinkle on top. We sprinkle it on top.
Last, fold in the toasted pecans and the butter, and thoroughly combine. Let it set chill for a few hours or overnight before serving.

- 1 tbsp. Honey

- ⅓ cup Green Onions sliced.
- 5-6 oz. Dried Beef minced, or thinly sliced roast beef or ham.

- In a large bowl, or you can use a stand mixer, combine remaining ingredients and mix well. Make sure not to over mix.
- Last, fold in the toasted pecans and the butter, and thoroughly combine. Let it set chill for a few hours or overnight before serving.
- *Optional – You can mix in the green onions, or you can slice them and sprinkle over the top. We opted to sprinkle them on top.
