Spinach Queso
This spinach queso is a really easy crockpot recipe for just about every occasion. It doesn’t really need to cook all that long so you can also resort to cast iron skillet if you want. If our garden tomatoes are in season, it also great flavor to throw those in as well.

This is s a great recipe that can be put in a crockpot and cooked in just a short time. It can be adjusted is a way that works better with different flavors, or mixed just as it is. It's great for a gameday dip, or any other party occasion.
Equipment
- Crockpot
Ingredients
- 8 oz Rotel
- 16 oz Pepperjack Cheese cubed
- 16 oz Monterey Jack Cheese cubed
- 12 oz Spinach Thawed or Fresh. It still works fine is you are not able to thaw.
- 4 oz Diced Green Chilies
- 8 oz Cream Cheese
- 2 tbsp Minced Garlic
Instructions
- Mix all ingredients into a crockpot and cook on low for about 2 hours stirring occasionally. Serve Warm.For quicker results you can cook on high for about an hour stirring occasionally.

Typically, we have some sort of dip going most weekends when the cold weather is setting in. Either that or there is football on TV, so there is lots of grazing going on.
