Trader Joe\’s Yellow Chicken Curry

 

During the Christmas holiday me and some of my girlfriends had a girls night! We love to go to different places whether its for dinner or brunch. This particular night we chose Thai food! I love Thai food but never tried yellow chicken curry before. My life was changed after having this dish at Taste of Thai in Fayetteville, AR. Of course I have leftovers so I brought them home for my husband to try and he was hooked as well after trying it. We knew that we had to have this again so he went searching for the perfect recipe.

This is what we came up with after a stop at Trader Joe\’s!

 

Thai Yellow Chicken Curry

2 TBS Butter

1/2 Diced Onion

Small bag of yellow new potatoes quartered (We got ours at Wal-Mart)

6 large carrots sliced

4 chicken breasts chucked

2 TBS Trader Joe\’s Everything But The Bagel Seasoning

1 can coconut milk

3 cups Chicken broth

1 bottle of Trader Joe\’s Thai Yellow Curry sauce

1 cup heavy whipping cream

Salt and Pepper to taste

2 cups cooked rice (We cooked ours in the Instant Pot)

 

In a stock pot add your potatoes and boil until tender. (Set aside)

In a large skillet sauté your butter, chicken, onions, carrots, and Everything But The Bagel Seasoning until everything is cooked down and chicken is cooked through.

To the skillet add your Thai Curry sauce, heavy whipping cream, chicken broth, coconut milk, salt and pepper and cook until it starts to thicken.

After its thickened add the potatoes and stir.

Once well combined you are ready to eat!

Serve the Thai Chicken mixture over rice!
