We have made this good gosh casserole on repeat numerous times, because it gets us out of the “what to make for dinner” phase. It’s really simple, and easy on the budget. My mom made it growing up, and I’ve never really got tired of it. Plus, if you live or have lived in the midwest, you known that a good casserole can feed a heard.

Good Gosh Cassarole

This is a quick and filling casserole that is easy to put together for any night of the week. It pairs good with bread or a simple side salad.

Ingredients
  

  • 2 lbs Ground Beef or Sausage
  • 1 Medium Onion diced
  • 1 Green Pepper diced
  • 2 cans Ranch Style Beans or 1 large
  • 2 cups Grated cheese of your choice
  • 1 pouch/box Spanish Style Rice
  • 1 Jalapeno diced (optional)

Instructions
 

  • Sauté the ground beef, onion, peppers, and jalapenos in a large skillet. Drain the grease.
  • Stir in the ranch style beans (undrained), and the Spanish rice. 
  • Pour the mixture into a greased 9×13 casserole dish and top with the grated cheese.
  • Bake at 350 degrees until bubbly.

Notes

If you are not able to find the Spanish rice in a can, 2 cups of Spanish rice will work just fine.  A long time ago when we started making this casserole you could buy Spanish rice in a can. If you are able to find it, a small box or pouch would work just fine. Either way you will need 1-2 cups of rice. 
Cook the rice separately as directed on the box.

This recipe is also very versatile. If you can remember way back, you could buy the spanish rice in a can. You can make you own style of spanish rice, or you can use the pouch/box for convenience. We’ve even taken the mixture, and rolled it up in tortillas, and eaten it that way. Or you can eat it on a tostado shell if that works for you. And if not try Mexican Stew, or Easy Taco Salad, and enjoy Green Chili Rice as a side.
