Cheesy Poblano Stuffed Chicken

This cheesy poblano stuffed chicken was a great way to use the poblano peppers we had leftover from a different grilling recipe we made. If they are in season hatch green chilies would also be good in this! If you go to Whole Foods they roast them for you when they are season! Talk about yummy! This recipe was easy to make and was even good leftover.

 

Ingredients:

2 large chicken breasts

2 medium poblano peppers

8 oz. cream cheese

1 1/2 cups your favorite shredded cheese

 

Directions:

Start out by roasting your poblano peppers whole. After you get nice grill marks they are done. Cut the peppers open and remove the seeds and the skin of the pepper. Place to the side.

Mix together your softened cream cheese and shredded cheese in a bowl. Mix until well combined. Set aside.

Cut or butterfly your chicken breast lengthwise so they lay out flat.

Take your cheese mixture and spread it over one side of the chicken breast. Next, take your poblano pepper and place it on the other side of your chicken breast. Once you have done this close your chicken breasts together and secure with toothpicks.

Then your ready for the grill! After it\’s done cooking you are ready to eat!
