Cauliflower Mac & Cheese

In several other posts we have mentioned that most of our weekend mornings are spent watching the Food Network, and this was no different.  The plus is that you have a side dish to make with the turkey meatballs that we made previously. We DO NOT turn down macaroni and cheese and cheese in our house, and we weren\’t going  start today. This cauliflower Mac and Cheese was easy, simple, and tasted just like the real thing (without the pasta).

Ingredients:

Kosher salt and freshly ground black pepper

1 tablespoon butter

1 cup whole milk

1/2 teaspoon dry mustard (we used whole grain mustard instead)

1 large head cauliflower

Hot sauce, as needed (We used chipotle peppers)

1 cup grated pepper jack cheese (We substituted it for Colby Jack cheese)

1 cup grated mild cheddar cheese

1/4 cup grated parmesan

1 cup grated pepper jack cheese

1 cup plain bread crumbs

Directions

Bring a large pot of salted water to a boil. Preheat the oven to 375 degrees.

Grease a baking dish with butter.

Cook the cauliflower in the boiling water until just crisp-tender, about 10 minutes. Drain well.

In a large saucepan, heat the milk and butter over medium heat. Whisk in the dry mustard (or whole grain mustard) and add some hot sauce (or chipotle peppers), salt and pepper. Just before the milk comes to a boil, turn off the heat and stir in the pepper jack (or Colby Jack cheese), and goat cheese (or mild cheddar cheese).

When melted and smooth, stir in the cauliflower. Spread the mixture into the prepared baking dish and sprinkle over the Parmesan and bread crumb mixture.

Bake until the top is golden brown, and the mixture is bubbling, about 30 minutes.

Let rest for a few minutes before serving.
