Butterscotch Pie

We came across this Butterscotch Pie recipe while going through some of my husband’s grandmother old recipes.  The ink on the recipe card was smeared, so we made the best of the writing that we could make out.  It turned rather delicious. This was also a first time making a pie in a cast iron pie pan, so I was easily able to work around that.

Ingredients

We baked our store-bought crust for the Butterscotch pie first based on instructions, but feel free to make your own.⠀The family recipe for this pie was super old, and it was hard to make out the writing. ⠀⠀⠀⠀⠀

1 1/2 cup brown sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 cup flour⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/8 teaspoon salt⠀

2 Cups Water

3 egg yolks

2 tablespoons butter

1 teaspoon Vanilla

Instructions⠀⠀

Mix the brown sugar, flour, and salt in a pan over medium heat.  Bring to a simmer and add the water.

Continue to cook until the sauce begins to thicken, then add the 3 egg yolks and 2 tablespoons butter.

Remove from heat and add 1 teaspoon vanilla.

Pour the mixture into the crust.  We used a store-bought crust we had baked per instructions, or you can make your own.

Put it in the fridge to chill for several hours and add whipped topping or Dream Whip if you wish. ⠀

This butterscotch pie recipe seems to be a good go-to for any gathering.  Especially on a hot summer day!⠀
