Light Chicken and Rice
We usually make this light chicken and rice when we aren’t looking for something really heavy. It’s not really the healthiest but it’s a little lighter that most casseroles. It’s also really easy to freeze so that you can pop it in the oven and heat it up another might of the week. It would go great with Cream Cheese Muffins.
Light Chicken and Rice
Ingredients
- 4 Chicken Breasts more or less depending on the number of people you are serving.
- ⅓ Cup Italian Dressing
- ⅔ Cup Rice
- 1 Bag Frozen Broccoli small bag
- 1 Bag Frozen Sliced Carrots small bag
- 1 Bag Sliced peppers and onions. small bag
- 1 Can French Fried Onions Rings
- 1 14.5 oz Can Chicken Broth
- ½ tbsp Italian Seasoning
Instructions
- Place the chicken breasts in a greased 9×13 baking dish, and bake uncovered at 400 °F for 20 minutes.
- Remove from oven and place the rice, vegetables, and 1/2 the can of fried onions in and around the chicken. You can remove the chicken place the ingredients on the bottom, and then return them if you want.
- In a small bowl combine the chicken broth, italian dressing, and pour over the chicken and vegetables.
- Continue baking in the over uncovered for another 25 minutes.
- Remove and top with the remaaing fried onions and italian seasoning, and continue another 2-3 minutes, or until cook ed through.

1 small Bag Frozen Broccoli
1 small bag frozen carrots
1 small bag sliced peppers and onions
1 Can French Fried Onion Rings
1 14.5 oz Can Chicken Broth
1/2 tbsp Italian Seasoning
This light chicken and rice recipe is a great option should you be getting tired of those heavy casseroles. It is also a good option for a make ahead meal to freeze and slid back into the over for an even quicker dinner. You can substitute these vegetables for anything else you might what to use. For this specific recipe we used brown rice, but ordinary white rice works too.
