Rhubarb Bars
Rhubarb bars are super simple, and easy to make. We only get to make them a few times a year depending on the rhubarb season, but thankfully my parents come through. Rhubarb might be something that we will consider planting in the garden in the next year.
Rhubarb Bars
Ingredients
3 cups Rhubarb
1 1/2 cup Sugar
3 tablespoons Cornstarch
1 Tsp. Vanilla
1/4 cup Water
1 1/2 cup Rolled Oats
1 1/2 Cup Flour
1/2 Tsp. Baking Soda
1 cup Brown Sugar
1 Cup butter
1/2 Nuts. – We used Walnuts.
Instructions
Cut the rhubarb stalk into small pieces and discard the leaf.
Combine the Rhubarb, sugar, cornstarch, and water. Cook until thick. Add vanilla and let cool.
Combine oats, flour, brown sugar, soda, butter and nuts in a separate bowl. Mix until crumbly.
Put 3/4 of the mixture into a 9×13 greased baking dish. We pressed in down for a thicker crust, and it holds together better.
Cover with cooled rhubarb and add the reaming mixture on the top.
Bake 30-35 minutes in a 375-degree oven.
Different Combinations for Rhubarb Bars
Rhubarb and strawberries
Rhubarb and blueberries
Almonds instead of Walnuts, or macadamia nuts.
Goes good with a scoop of vanilla ice cream.
