Simple Spinach Salad

The good thing about a light salad like this is that it pairs great with most anything that you can grill during the summer. In our house most of the time we have gravitated towards the common bag salad that you can pick up in the grocery store. We moved towards this option because it tastes a little better, a little healthier, and some of the ingredients we can get from our garden.

Ingredients
  

  • 3 tbs. White Wine Vinegar
  • ½ tsp. Salt
  • tsp. Pepper
  • ¼ tsp. Dry Mustard
  • 2 tbsp. Minced Garlic
  • ½ Red Onion cut into rings
  • ½ cup Feta Cheese to top
  • 2 tbs. Chopped Parsley
  • 5-6 cups Baby Spinach leaves
  • ½ head Cauliflower cut into florets
  • 3-4 Avocados chunked

Instructions
 

  • Mix together white wine vinegar, oil, salt, pepper, dry mustard, parsley and minced garlic.  Set aside.
  • While dressing is standing wash the spinach in cold water and remove the stems.  We did leave a few stems.
  • Dry well, and combine with cauliflower, avocado, and red onions in a large salad bowl.
  • Add dressing and toss lightly to mix well.  Top with Feta cheese.
  • This simple spinach salad is best if served chilled.

Notes

If you wish, you can omit step number one and the ingredients to create your own. The best way to serve is to drizzle the dressing on right before serving.
