No-Bake Christmas Cranberry Clusters

These Christmas Cranberry Clusters are a simple, festive treat anyone can make. Milk chocolate, crunchy nuts, and sweet dried cranberries come together with a hint of rum flavor for a little holiday magic.

Equipment

  • 1 Large Microwaveable Bowl (glass is best)
  • 1 Crockpot optional
  • 1 Sheet Pan we use three to speed the chilling process
  • 1 Cookie scoop optional
  • Parchment paper

Ingredients

  • 24 oz White Almond Bark
  • 24 oz Chocolate Almond Bark
  • 12 oz Semi-sweet Chocolate chips
  • Cup Dried Cranberries
  • ½ tsp Rum Extract
  • ½ tbsp Vanilla
  • 34 oz Peanuts of your choosing we use dry-roasted
  • 1-2 tbsp Coconut Oil optional
  • Sprinkles optional

Instructions

  • In a large microwavable bowl add all of the 3 chocolates and the coconut oil. Place in the microwave and alternate every 30-60 seconds intervals, remove and stir. Mixing in the coconut oil gives the chocolate a more smooth and silky texture.
  • Once all of the chocolate is completely melted without and chunks, add all of the remaining ingredients.
  • Mix thoroughly, until all the mixture is well coated in the chocolate.
  • Place scoops of the mixture on a parchment lined baking sheet. If you don't have cookie scoop, a large spoon will work. Make the clusters as large or as small as you want.
  • Optional: If you would like to add Christmas or festive sprinkles, do so now.
  • Set aside to cool once the sheet pan is full. This time of year, if it's chilly we set ours outside for about an hour to harden up. Or you can place them in the freezer for 10-15 minutes.
  • Keep lining the sheet pans until all the mixture has been used. The more sheet pans you use the fast the process goes.
  • Once the chocolate has hardened, enjoy! They freeze well too!

Notes

You can make these in the crockpot if you'd like, but we prefer this way.  Just put your peanuts in the bottom and add the chocolate and other ingredients on top.  Cook on low for about 2 hours stirring occasionally. Once melted, just follow the last five steps.
