Line the bottom of your casserole dish with grahams crackers.
Using a hand mixer or a stand mixer, cream together the butter and sugar.
Once creamed together, add the egg yolks, vanilla and pineapple and mix together.
Next, gently fold in the egg whites.
Spead the mixture over the graham crackers, and cover with another layer of crackers.
Make one of the packages of Jello according to instructions, until dissolved.
Once the Jello is almost set pour over the top of the graham crackers.
Place in the fridge until the Jello is fully set.
Make the last packet of Jello and wait until that has almost set and pour that over the top.
Place in the fridge to fully set.
Once it has fully set, you can remove the spread the Cool Whip over the top. Garnish with cherries.
