This is our simple and easy version of Beef Bourguignon. There are many different ways to make it with various ingredients, but this one works best for us.
2envelopes Beef flavored Mushroom or Onion Soup Mix.
2-3 Bay Leaves
2tbspWhite Wine Vinegar
4tbspTapioca
½-1lbFresh Mushrooms (sliced)
1Pkg. Small Boiler Onions.
3-4Good-sized carrotschunked about 1/2 inch thick.
Instructions
In a medium bowl mix together the water, wine, ketchup, soup mix, vinegar, and tapioca.
Next place the chuck roast in the Dutch oven and pour the mixture over the top.
Drop in the bay leaves.
Place into a 250 °F
About an hour before removing take the roast out and add the carrots, onions and the mushrooms. Let it continue to cook for about another hour or until it temps, and the veggies are soft.
Notes
*You can also make this in a crockpot, and it would just as good. Just follow the same ingredients and proceed with the instructions. Set it on low, and cook for about 8 hours, or until the meat and the veggies are tender.
