Apple Pumpkin Oatmeal
This is perfect for the fall and winter weather. It's hearty, filling, and can be put together in just a short time. Plus, it can feed our entire family.

- 2½ Cups Oats We used just plain rolled oats.
- 4 Cups Milk
- 1 Cup Pumpkin Puree
- 1 Tbsp Pumpkin Pie Spice
- 1 Tbsp Apple Pie Spice
- 4 Tbsp Brown Sugar
- 3 Tbsp Maple Syrup extra for a little drizzle on top.
- 2 Apples peeled and diced. Your choice, we use the Honeycrisp.
In your medium pot over high heat, combine the oats and milk. Bring the mixture to a slow boil, stirring often.
Lower heat to medium, add diced apples, and cook for approximately 5-7 minutes, occasionally stirring, until the oats soften, and the liquid thickens. *Cooking the apples in milk too long will cause them to break down faster. Remove from heat. You can add your apples a few minutes before removing from the heat for more intact apples.
Stir in the pumpkin purée, pumpkin pie spice, apple pie spice, brown sugar and maple syrup until evenly distributed. Serve warm. You can add the apples here for a crunchier apple if you wish.
- For a more entact apple you can add right before you serve. Be mindful that the longer the apples sit in the warm milk the faster they will break down.
